If they have the Modify Records User Permission (which Records Co-ordinators do) and are part of the necessary Access Controls (Update Record Metadata) then the are going to be able to edit the titles.
This is irrespective of the type of records (Be it documents, folders, boxes etc)
I'd say removing the Modify Records permission wouldn't be feasible as that would have far reaching consquences.
You could adjust the Update Record Metadata permission such that users can't modify the Titles but that means they can't adjust any metadata.
Unless I'm mistaken there is no permission and or system option that says either "only prevent title updates" or "only prevent title updates on specific record types)
So you're probably left to telling users to not edit titles they shouldn't be. Which can be fun when they don't listen. :)

Thanks Peter - what I was able to do was - system options - user type -Records Coordinator - untick modify records. this has worked perfectly
